  • They last longer if you keep them with the stalk down.
  • When you buy tomatoes from the market and want to keep them for a while, note their color : a package in which all the tomatoes have the same color is probably packed before another package where there are different shades of red. You can also look at the boughs : they must be fresh and green.
  • Caution : The maintenance of the fruits of tomato in the refrigerator is simply a misunderstanding. In practice , refrigeration stops the ripening of tomato and causes alteration in texture and flavor.
  • DO NOT PUT THEM IN THE FRIDGE ! - Tomatoes are longer retained on the shelf than in the fridge and get more flavour as they continue to mature.
  • The right time to consume a tomato is when it has a rich red color and has slightly softened. Always store the red tomatoes in a shady place with room temperature .
  • Remove the tomatoes straight from the packaging and place them on a hard surface, away from sunlight . Do not wrap them in a paper or a towel. If one is moldy, they will all get moldy.
  • Good tomatoes which have been preserved in this way, will last from one to three weeks. However , after the sixth day they will start to lose flavor and the second week they will begin to deteriorate.
  • Washing - wash before consumption and not the time of purchase. It will last longer.
  • Cut into slices or cubes - always use a sharp knife , especially if the tomatoes are mature enough.
  • Ripening - if you can, leave them mature as described above. If you need to expedite the time of their ripening, put them in a paper bag with a ripe banana or a ripe apple.
